Easter Basket Cookies
Ingredients:
1 box of cookie mix, any brand
1/2 C. vegetable oil
2 tbsp. flour
2 eggs
1 C. coconut flakes
green food coloring
Sour Punch Green Apple, Strawberry and Blueberry Candy Straws (I found mine at my local gas station in the candy section)
White frosting
Cadbury mini malted eggs
Toothpicks
Round frosting tip
Disposable piping bag
Kitchen scissors
Non-stick cooking spray
*Makes approximately 16 cookie cups
Directions:
Preheat the oven to 350 degrees and spray a 12 count muffin tin with non-stick cooking spray.
Combine the cookie mix, flour, vegetable oil and eggs, mixing well.
Take a 2″ scoop of cookie dough and place in each muffin well, gently pressing down to fit the muffin well.
Bake for 15-17 minutes.
Remove from the oven and let cool completely.
Take a toothpick and gently carve 2 holes on top of each cookie. You want it large enough for the Sour Punch Straw to fit.
Once the holes are carved use the kitchen scissors to shorten the Sour Punch Straws to your desired length (about 4-5″) and insert into the cookie.
Add green coconut flakes.
Top with Cadbury Mini Malted Eggs.
Repeat with all the cookie cups.
We enjoyed this sweet Easter treat with Hood Calorie Countdown 2% Reduced Fat Chocolate Dairy Beverage. Right now you can get a $0.75 coupon off any Hood Calorie Countdown Dairy Beverage at Walmart. It is a blend of ultrafiltered milk, from dairy farmers that do not add artificial growth hormones to it, with other premium ingredients to give you the creamy taste of milk with less calories, sugar, and overall carbohydrates.
Now I don’t mind giving my son a second glass of it because I know he isn’t getting as much sugar as he would with a regular cup of milk. And it really does taste good! (He is super picky, so the fact that he’s asked for a second up should tell you a lot.)
Hood Calorie Countdown Dairy Beverage still has 25% of the recommended daily calcium and 15% daily Vitamin D per cup. But it has 75% less sugar! It comes in Whole, 2%, Fat-Free, and Chocolate-Flavored. It’s located in the Milk Section of Walmart, so you don’t have to go searching around the store for it.
